I first heard about vegan black bean brownies over seven years ago.

At the time, my dad was (unknowingly) having some very serious heart issues.

After complaining about recurring chest pain for months, my mom finally decided to call his doctor (because he was too stubborn to do it himself, and he insisted he was fine).

Even though he ended up getting cleared after some initial testing, my mom kept pushing for the doctors to run more tests or reexamine the results.

Finally, after months of trying to figure out what was wrong, the doctors found that one of his arteries was partially blocked and he needed a stent.

I’m so thankful my mom kept pushing the doctors, because I don’t even want to imagine what would have happened if she hadn’t.

So how does this relate to vegan black bean brownies, you ask?

While my dad was recovering from his procedure, he went to rehabilitation each week.

Part of his rehabilitation not only involved working out, but also developing healthier eating habits.

He also met a woman there who gave him the recipe for a healthier version of brownies, which has evolved into this vegan black bean brownies recipe.

While I’ve tweaked a few of the ingredients to make the original recipe vegan, I’m still raving about these brownies years and years after my dad’s surgery and rehab.

I love to make these brownies whenever my husband and I are in need of a sweet treat.
