How to Make the Most Delicious, Yet Guiltless Strawberry Shortcake Bites

I talk about health a lot on TBC, but have I ever mentioned I have a total, at times uncontrollablesweet tooth? It’s true. Luckily though, one of my absolute favorite desserts does have one nutritious element to it…


I’ve always been a strawberry shortcake kind of girl. I’ll honestly choose it over cake or almost any other treat, even on my birthday.  There’s something about this classic dessert that I just can’t get enough of. And after all, it’s kind of an American icon.

So, when I the opportunity arose to work with Macy’s in promoting their celebration of Strawberry Shortcake Day on June 14th, I couldn’t resist. Food, shopping and music? What’s not to love? It’s actually three of my favorite things in one place!

I’ll get into more details about the event at the end of this post, but first I want to share with you my take this classic treat. If you’ve read along for awhile, you know that I’m interested in simple, clean recipes. I like as little steps as possible, with maximum flavor and minimum junk food. It sounds demanding, I know. But I swear it’s possible. Check out my take on strawberry shortcake. It’s bite-sized, but still packs a huge flavor punch without the guilt of eating a whole cake!


♥ Strawberries

♥ Angel food cake

♥ 1 cup cream cheese

♥ 1/2 cup greek yogurt

♥ 2 tablespoons coconut sugar or other sweetener

♥ 1 tablespoon vanilla


♥ Cut angel food cake into bite-sized pieces, and remove stems from strawberries

♥ Combine and stir cream cheese and greek yogurt in a medium bowl

♥ Add in the coconut sugar and vanilla and mix well

♥ Spread some of the cheesecake mixture on top of the angel food cake pieces and top with a strawberry

♥ Hold together with a toothpick (you can find the cute pink “enjoy!” toppers below!)

Overall, what I love most about this recipe is that I can make it in under 10 minutes. Plus it’s the perfect snack when I’m craving something sweet! I’d also love to have these at a dessert bar at the next party I host. Bite-sized treats are always a hit.
