Yup, you read that headline right.
Heart. Healthy. Brownies.
They’re the real deal. And guess what? They don’t taste like sh*t. I swear I tricked Richard into thinking they were Betty Crocker. So sly.
To be honest, I had kind of forgotten about this recipe…until last week. October has been crazy for me. I’ve been constantly bouncing between go go go and total crash mode. Not to mention, there’s been WAY too much candy in our apartment, and I’m a total sucker for sweets. I needed something to satisfy my sweet tooth, yet curb my processed, sugary binge.
So, after scouring the web and coming up with nada, I resorted to one of my old faves: black bean brownies. And I know what you’re thinking…
One word: EW.
But don’t judge the ingredients because trust me, they all come together for super kicka**, perfectly chocolatey brownie.
Sidenote: I first heard about this recipe when my dad was having some almost-serious heart issues. He was complaining about recurring chest pain on the reg when my mom decided to call the doc (without his knowledge, lol). Even though he got cleared, my mom kept pushing for the doctors to run more tests or reexamine the results. Finally, they found that one of his arteries was partially blocked, and he needed a stent. So, bottom line: you know your body best, and doctors aren’t right 100 percent of the time. Keep pushing if something doesn’t feel right.
Anyways, while my dad was recovering from his procedure, he went to rehabilitation each week. He met a woman there who gave him the recipe for this healthier version of brownies! So thanks to whoever that was. I’m still raving about them a few years later!
Now, here’s what you need to know:
♥ 1 15-oz. can black beans, drained and rinsed very well
♥ 2 tbsp. cocoa powder
♥ 1/2 cup quick oats
♥ 1/4 tsp. sea salt
♥ 1/3 cup agave nectar
♥ 2 stevia packs
♥ 1/4 cup coconut oil
♥ 2 tsp. pure vanilla extract
♥ 1/2 tsp. baking powder
♥ 1 egg white
♥ 1/2 cup to 2/3 cup chocolate chips
♥ Preheat oven to 350
♥ Combine all ingredients except chocolate chips in food processor (I used my NutriBullet)
♥ Blend well
♥ Stir in chocolate chips
♥ Pour into greased 8×8 pan
♥ Add extra chocolate chips on top for presentation
♥ Bake for 15-18 minutes
♥ Let cool at least 10 minutes before serving
