For those of you who have never made mug cake before, mug cake is simply a cake that you can bake in a coffee mug in your microwave.

There’s no preheating your oven, and the cake is usually cooked in under two minutes (exact cook time varies depending on your microwave wattage).

The best part about this mug cake though is of course that it only has three ingredients.

It doesn’t get any simpler than that.

Not to mention, this mug cake is also a flourless peanut butter cake recipe and keto friendly.

Believe it or not, this mug cake is a totally flourless mug cake as well and doesn’t contain added sugar (I use this as a sugar substitute in most of my desserts).

It’s definitely a healthier alternative to “real” cake!

Ingredients

  • 3 tbsp creamy peanut butter
  • 1/2 tsp stevia
  • 1 egg
  • 1-2 tbsp dark chocolate chips (optional, but I think it makes this mug cake all the more delicious!)

Instructions

  1. Combine all ingredients thoroughly in a medium sized microwave safe coffee mug. You'll want to make sure you mix this very well, so the egg is completely combined with the peanut butter (otherwise the cake may not rise properly).
  2. Microwave mixture for about 1-2 minutes. The exact time will depend on your microwave wattage, and you'll want to keep an eye on the cake while it's cooking to see how it's rising. I cooked this keto peanut butter mug cake for 1 minute initially, and then added 30 seconds to finish cooking after taking it out of the microwave and inspecting it.
  3. Once the cake has cooled enough, enjoy this treat immediately. The longer it sits, it will start to dry out and turn rubbery, so you'll want to eat this immediately once it's cooled. Optional (but delicious) toppings include whipped cream, melted peanut butter, and extra dark chocolate chips.

Notes

Once the cake has cooled enough for you to eat it, you'll want to enjoy this treat right away! It will start to dry out if you leave it sit for too long, and it may take on a rubbery texture so I recommend adding your toppings and eating this mug cake as soon as it's cool enough. You may also notice a slightly different texture to this cake in general (even if you don't let it sit too long), since it doesn't include many of the normal cake ingredients that tend to make cakes more unhealthy. However, I still find this 3 ingredient mug cake to be quite delicious and satisfying for my sweet tooth regardless!
